Whew! The past week as been a whirlwind! I’m so happy to be blogging again.
Today is Stephanie’s 3rd birthday. She’s been talking about her birthday party since January. Everything was to be pink and Barbie themed. So in my infinate domestic wisdom I decided to make a Barbie cake with homemade frosting. Knowing that my in laws poo poo anything that isn’t from a restaurant or store bought we had a Giant Eagle cake as well.
The frosting is ridiculously simple to make and so yummy!
Buttercream Dream frosting
1/2 cup butter
1/2 cup vegetable shorting
1 tsp vanilla
1 cup powered sugar (you can use regular sugar in a pinch but it will have a gritty texture)
1. Cream butter and vegetable shorting
2. Add powered sugar and cream until smooth
3. Add vanilla and food coloring if desired
4. Continue to mix until fluffy
It’s a simple recipe but it yields a great frosting! Once you make this recipe your own you’ll never by frosting in a can again!
I think the party was a great success! I like things simple. Good food, good friends, and good conversation. Everything else is a bonus!
Tomorrow is the day I work off all of the cake and cheeseburgers! (That means my long run is happening. Cake can be a part of carb loading right?)
